Bananas – Another way to eat them
Everybody knows the normal way of eating a beautiful yellow banana; you peel the banana and eat it.
Another way to eat them is to prepare a delicious rice banana salad for a barbeque or a party. I love that rice banana salad especially when my wife can prepare it with our own bananas from the back yard. So first I have to select a banana plant to cut down and harvest the cluster. Then ripening takes its time. Later my wife selects the bananas for the rice banana salad.
Ingredients for 4 to 6 persons:
150 g long grain rice, salt,
300 g frozen peas,
3 table spoons (salad) mayonnaise and 3 table spoons vinegar
1 tea spoon mustard, pepper, sugar
2 bananas
4 tea spoons lemon squash
200 g cooked ham
Preparation:
Cook the rice and peas as usual in saltwater. Pour off the water and let it cool down. Stir mayonnaise, vinegar and mustard. Salt and pepper to a sauce. Cut bananas into slices and dash them with lemon squash. Cube the ham. Mix rice, peas, bananas and ham with the sauce. Wait an hour and serve it cold.
